Gay Water-ita

why it works
a margarita is tequila, orange liqueur and lime. this version adds gay water lime on top, which does two things: it stretches the drink into something you can sip for a while, and it cuts the sweetness of the triple sec with bubbles and more lime. the salt rim is non-negotiable.
make it for a crowd
pitcher for 6: 6 oz tequila, 6 oz triple sec, 6 oz lime juice, stir with ice, then pour into salt-rimmed glasses and top each with gay water lime. batch the base ahead and keep the cans cold so the top stays fizzy.
swaps
lose the triple sec and use a splash more lime for a skinny version. a tajín rim instead of plain salt is an upgrade. grapefruit gay water instead of lime turns it into a paloma-rita, which is a real thing now.

a rocks glass, rimmed in salt or tajín (run a lime wedge around the edge first so it sticks), a lime wheel and a sprig of mint. it pairs with exactly what you think: tacos, guac, anything with a lime on the side. want it frozen? throw the whole thing in a blender with a cup of ice, minus the gay water, then float the gay water lime on top after you pour so it keeps its fizz.
